INSILICOFFEE: the digital innovation transforming the coffee sector

On Tuesday 28th October 2025, at the Simonelli Campus in Belforte del Chienti, the event dedicated to the presentation of the results of the INSILICOFFEE project, promoted by the University of Camerino in collaboration with Nuova Simonelli, Gambilongo Caffè and SPICI srl, took place. 
INSILICOFFEE is a pioneering project that revolutionises the coffee sector through the use of Digital Twin and artificial intelligence. During the scientific session, Antonioreneè Barletta, AI Specialist at SPICI, presented the contribution “Insilicoffee: an AI inversion approach from the chemical profile to the coffee recipe," exploring how AI can optimise percolation processes, ensuring superior coffee quality and personalisation of the consumer experience.
The project represented a concrete example of integration between scientific research and industrial innovation, aiming to improve the quality and sustainability of production processes in the coffee sector through advanced digital solutions.
INSILICOFFEE is a winning project of the public call of Spoke 9 "Digital Society & Smart City", of the National Centre for HPC, Big Data and Quantum Computing, financed by PNRR - NextGenerationEU.
An important step forward for SPICI srl, Nuova Simonelli, Gambilongo Caffè and the University of Camerino in the journey of digital innovation applied to tradition, uniting technology and coffee culture.
