INSILICOFFEE: the project of a digital twin for coffee customization kicks off

On 28 January 2025, at the headquarters of SPICI srl in Naples, the Kick-Off Meeting of the INSILICOFFEE project took place, a pioneering initiative that marks a significant step towards digital innovation in the coffee world.

A project funded by the PNRR for tailored coffee

INSILICOFFEE was selected within Spoke 9 “Digital Society & Smart City” of the National Centre for HPC, Big Data and Quantum Computing, with the support of the National Recovery and Resilience Plan (PNRR) - NextGenerationEU. This funding rewards an idea that aims to combine tradition and technology, ensuring a customised, optimised and sustainable coffee tasting experience.

Advanced technologies for perfect coffee

The project is based on the integration of Digital Twin dedicated to the roasting and percolation processes of coffee and the use of Physics Informed Neural Networks (PINN), advanced tools that allow precise and dynamic modelling of production parameters. This technology will offer baristas an intelligent system for regulating coffee machines, improving product quality and reducing waste.

INSILICOFFEE is the result of collaboration between University of Camerino (UNICAM), Simonelli Group, Gambilongo Caffè and SPICI srl, entities that share a common vision: to innovate the coffee sector and make it more efficient, sustainable and aligned with the needs of modern consumers.

The Kick-Off Meeting was a key moment to start the project, outline development strategies and strengthen synergies among the partners involved. The enthusiasm and participation of the stakeholders confirm the great potential of this initiative, which aims to transform coffee into a more aware and technologically advanced experience.
